Roasted Rosemary Potatoes


I love roasted potatoes...there's just something about them. Almost like having upscaled french fries. And it's so simple, there's no reason not to have them instead of the everyday mashed potatoes.


Begin with some little red potatoes (or yukon gold potatoes) and get them washed, dried and quartered. (some get cut in half and then into thirds if they're a little too big) I wouldn't use russet or baker potatoes...they tend to fall apart during the roasting time...
